A whole grain sourdough masa harina and spelt cake layered with roasted apricot compote and elderflower cordial swiss meringue buttercream.
* Masa Harina is nixtamilized corn flour typically used in Mexican cuisine to make tortillas. The masa harina we are using was grown by our friend and employee Anna Perry. We nixtamalized it and stone ground it in our bakery.
