Our 100% Spelt Choux bun baked with a craquelin cookie top for some crunch. Filled with a lightly infused tarragon vanilla cream and strawberry jam. The tarragon cream tastes much like the fennel cream I’ve used in the past. It has a slight anise licorice flavor that is subtle.
